Sekuwa technique ho, recipe matra haina. Spice mix jati ramro vaye pani galat marinate gareko khasi ruff hunchha. Yi tin niyam follow garnu:
Niyam 1 — Acid + Oil balance
Marinade ma acid (dahi, lemon, vinegar) ra oil dubai chahincha:
- Acid masu ko protein tod-falcha → tender hunchha.
- Oil spice lai meat ma stick garaucha ra grill ma juicy rakhcha.
Ratio: 3 tbsp dahi + 1 tbsp tel per 500g khasi.
Niyam 2 — Salt early, spice late
Noon kheri kheri halnu — kam se kam 2 ghanta agadi. Yo masu lai deep flavor dincha.
Tara kasturi methi, garam masala, ra hariyo dhaniya last 30 minute ma matra halnu — tinko aroma volatile hunchha, jhan jhan udi-jancha.
Niyam 3 — Rest, do not rush
Marinated khasi lai kam se kam 4 ghanta (best overnight) fridge ma rakhnu. Yo time meat fibers lai relax garna dincha.
"Quick marinate" bhanne kura sekuwa ma kaam gardaina. Plan ahead — taste twice as good.
Bonus
Skewer ma halne bela, masu ko piece haru bich ma 1 cm gap chodnu. Tite packed bhayo bhane heat evenly distribute hudaina, kati piece raw kati overdone hunchha.
Result: char outside, juicy inside, spice deep ma pugeko sekuwa.
