Choila ko jadu

Choila Newari khaana ko star ho. Tara dherai jana lai "ghar ma banauna garho hunchha" bhanne lagcha. Aaja simple way batauchu.

Saamagri

  • Buff boneless — 500g (Masubox ko cubed cut linu)
  • Tel — 4 tbsp (mustard oil best)
  • Lasun — 8 kali, crushed
  • Aduwa — 1 inch, grated
  • Khursani powder — 2 tsp (Bhutanese best)
  • Timur — 1 tsp, roasted ra crushed
  • Methi dana — 1/2 tsp
  • Besar — 1/2 tsp
  • Tori ko tel — 2 tbsp (garnish)
  • Lemon — 1
  • Hariyo khursani — 2, chopped
  • Dhaniya patta — handful
  • Noon — taste anusaar

Banaaune tarika

  1. Buff lai pani sanga 15 min boil garnu (noon ra besar haalera). Soft hunu paryo tara melt navai.
  2. Tato grill pan ma 2 min char garnu — yo nai "smoky" taste ko key.
  3. Slice garnu thin pieces ma.
  4. Karahi ma tel tataunu, methi dana tadkaunu, ani lasun-aduwa halnu.
  5. Khursani powder ra timur halera 30 sec bhutnu (jhalkanu hudaina).
  6. Buff slices halera 2 min high heat ma toss garnu.
  7. Aanch banda gareko ma raw mustard oil, lemon juice, hariyo khursani ra dhaniya patta halnu.

Chiura, achar, ra aila — full Newari setup. Tara bhat sanga pani matra ramro lagcha.

Tip: Buff ko sattaa khasi ko boneless prayog garnu pani milcha — choila ko base recipe same nai ho.
